Abstract

Metode High Performance Liquid Chromatography (HPLC) digunakan dalam penelitian ini untuk menganalisis kandungan asam klorogenat dalam biji kopi. Senyawa fenolik asam klorogenat dapat meningkatkan sifat organoleptik dan potensi manfaat kesehatan kopi. Dilakukan tinjauan literatur untuk mengetahui Kandungan Asam Klorogenat dalam Biji Kopi dengan Metode HPLC yang dianalisis dari beberapa jurnal yang sejenis. Metode penelitian yang digunakan yaitu tinjauan literatur atau literature review dengan mengambil data pada database jurnal yaitu Google Scholar, Smantic Schoolar dan ScienceDirect. Jurnal yang diseleksi merupakan jurnal dalam kurun waktu 2013-2023 dengan kata kunci yang telah ditetapkan dan diambil 25 jurnal yang sesuai Diharapkan hasil penelitian ini akan memberikan pemahaman lebih lanjut tentang kandungan asam klorogenat dalam biji kopi dan menunjukkan bahwa metode HPLC lebih baik untuk menganalisis senyawa tersebut. Hasil penelitian ini juga dapat menjadi landasan untuk pengembangan teknik analisis yang lebih kompleks dan pemahaman yang lebih mendalam tentang komponen bioaktif yang ada dalam kopi.
